If there is an approved visa, it would certainly be helpful to get a letter from the sponsoring company telling the embassy that the job offer is still open, and that they are looking forward to when you can start working for them.
The attorney who worked on the petition and is handling your documentation should be able to draft an appropriate letter for the company to use as a model.
If the letter you get is from a company that is different from the sponsoring company, then, it may not help at all.
Based on other answers to this question, you should expect to show:
You met the qualification requirements listed in the Labor Certification (PERM) BEFORE the PERM process was started
You are still qualified for the position
The company still wants you to work for them, and you still want to work for the company
The company still has the resources and means to pay you the wage listed in the documentation.
